For next year, I was thinking of doing Blackened Catfish rather than the Maple/Soy Salmon or the Sole Almondine. I was wondering what you thought? I’m looking for dishes to keep for next year. Some people were upset that I am changing the menu completely. OK. Well, then, I’ll keep a dish or two but I need votes.

  1. Well, that’s too bad because you’re getting Spanish food. Paella, Tacos, Caldo de Pollo, Pollo con mole poblano, stuff like that. The theme for next year isn’t up for a vote just a dish from this year. Thanks for the vote. Though I know there are people out there who would vote the salmon out.

    Oh, and what theme would you pick?

  2. Ooh, that’s a strong vote. OK. Then you get Paella and you get Maple Soy Salmon. That’s two fish.

    I also will have at least one nice chicken dish. Say, roasted chicken, with an optional mole sauce. Probably serve that on the side. Or maybe just do a nice Equidorean roast chicken with yellow rice. And then a Colombian caldo (stew/soup) de pollo (of chicken). Tapas, well, that’s kind of like apps, differnt types and wonderful. And then I’ll have some lasagna, with beef and veggies in the lasagna. I started making at the end of the season and I’ll bring it back as one of the non-Spanish influenced dishes. (I’ll probably throw in a taco like dish and I’ll include arepas and empanadas.)

    I might sub the sole almondine for the paella. It’ll be three theme dishes and three non and for the weekend classes, two theme and one non.
