The Big Moose got a face lift today. I lightened it a little by adding more egg whites and a touch more butter. It no longer a massive block of chocolate, sigh, but rather a nice airy mousse. However, I am blending in 82% Scharffen Berger chocolate with the 70% so it’s even more chocolatey.
I’ve been having a great time with it.
